Love them or hate them, beans are packed with nutrients, fiber and protein and can be a really great addition to your diet. So I decided to make an easy, healthy brekkie using Butter Beans and my favorite @zz2farming 100% Romanita Tomato Juice that's packed with goodness! When tomatoes or tomato juice is cooked it is said to increase the availability of key nutrients, such as the carotenoids lycopene, lutein, and zeaxanthin which are powerful antioxidants. MLW Beans on Toast: Serves 2 Ingredients: 1 cup cooked Butter Beans 200ml @ruganijuice @zz2farming 100% Romanita Tomato juice 1/4 of an onion finely sliced 10 @zz2farming Romanita tomatoes 10 mushrooms sliced Salt, pepper & chilli flakes to taste 2 slices of your favorite bread Basil leaves for garnish Method: Add the beans, tomato juice, onion, Romanita tomatoes, mushrooms, salt & pepper to a pan on medium heat and let it simmer for 15 to 20 min stirring occasionally. Once the juice has reduced mash the tomatoes lightly with a fork and simmer on a low heat for another 5 min or until the mixture thickens. Serves on toasted bread with a drizzle of Extra Virgin Olive Oil, chili flakes and fresh Basil leaves.
