Spring is in the air in the Southern Hemisphere and I am loving it!
It might still be some way to go before things look and feel like Summer, but this simply delicious smoothie recipe will make you feel like you're on an island enjoying the sunshine and sea.
Pineapple and coconut make for such a wonderful combination and that's probably why a Pina colada Cocktail is so popular right around the world. This smoothie is way better for your body and it still has a lot of flavor.
Enjoy it as cold as possible and feel free to add a little stevia or another fresh medjool date if you prefer yours sweeter.
MLW Pineapple & Coconut Smoothie:
1 cup of frozen pineapple
1 cup of coconut milk or unsweetened almond milk
1/2 cup of coconut cream/yoghurt
3 tablespoons of shredded coconut
1 fresh medjool date or 1 tablespoon of maple syrup
2 tablespoons of fresh lemon juice
1/2 a cup of ice (optional)
Add all of the ingredients to your blender and blend until smooth.
Enjoy cold and garnish with a piece of pineapple and a sprinkle of shredded coconut.
