I'm always late with trends, and I'm okay with it. But, I am so happy that I tried the Mini Pancake trend because OMW it's AMAZING!
But I didn't just want to make any old mini pancakes for you all, so I used my favorite Superfood Protein Powder from Wazoogles to add not only more nutrients, but a little magic too. The Wazoogles Superfood Protein Blend - Unicorn Berry is the perfect addition to to make plain pancakes magical (and yes, it turns the milk lavender after a while).

Ingredients:
1 ½ cup all-purpose or spelt flourÂ
1 scoop Wazoogles Unicorn Berry Superfoods Protein Shake
1 ½ tsp baking powder
½ tsp baking soda
2 tbsp coconut sugarÂ
½ tsp salt
1 cup unsweetened almond milk
2 tsp apple cider vinegar or lemon juice
1 tsp vanilla extract
oil for frying
Toppings (of your choice)
I used frozen blueberries, raw honey, almond milk and Wazoogles Superfoods Breakfast Bomb Berry Storm
Instructions: Pour the milk into a bowl and ddd the apple cider vinegar, stir to combine. Set aside for about 5 minutes until it curdles to create vegan 'buttermilk'. In another bowl, whisk together the flour, vegan protein powder, baking powder, baking soda, sugar, and salt. Stir the vanilla extract into the vegan buttermilk and add the flour mixture. Stir to combine, adding more milk if needed. Heat a large non-stick pan over medium heat and lightly grease the pan with oil. Pour the batter into a piping bag or squeeze bottle. Then pipe small mini pancakes onto it. Cook for about 45 - 60 seconds, or until the top starts to bubble. Then flip and cook on the other side, until golden on both sides. Add toppings, some milk and enjoy!
