Quick & Easy Veggie Pasta (Gluten Free & Vegan)

I love pasta, and since I've discovered Happy Earth People's products I've been enjoying gluten free & protein-packed pasta a lot more.


So I thought I'd share my favorite quick and easy veggie pasta recipe that you can make for a light lunch or dinner!




Single Serving


Ingredients:


1 cup of Happy Earth People's chickpea pasta

1 cup of mixed veggies, I used broccoli, spinach, mini corn and zucchini

2 tbsp of Tahini (I used the ones from Oh Mega Nut Butter's)

A squeeze of lemon juice

Extra virgin olive oil

Salt & pepper

Chilli flakes (optional)

Fresh Basil leaves to garnish


Method:


Cook the pasta as per cooking instructions on the box, and keep +/-4 tbsp of pasta water for later.


Steam veggies until tender and season with salt, pepper and chilli flakes to taste. Squeeze over a little lemon juice for extra freshness.


Once everything is cooked, add the pasta and veggies back to the pot that you cooked the pasta in and on a low heat stir in the above mentioned pasta water and Tahini until everything is coated. If it's a little dry add more tahini or pasta water and stir it through lightly until it's creamy.


Season with more salt & pepper if needed. Drizzle with extra virgin olive oil and add a squeeze of lemon. Garnish with fresh Basil leaves and enjoy!
